PB&J Hummus Balls

Hello my loves! Oh how I’ve missed you! Whenever I post early one day and late the next, it feels like it’s been SO long since we’ve “hung out”!

So what have you guys been up to?…besides giving me a fat head about being the most clicked on link for What I Ate Wednesday! By the way, I LOVE you guys! You always know how to perk a girl up in the middle of the week!

Huh…what have I been doing? Well, thanks for asking! Oh, I’ve been doing the side shuffle in my corner of the ring preparing for the throwdown hinted to on Jess’s blog. Please tell me you guys saw her post on the BBQ Bars! If not, go NOW and check it out!


I think I may have finally met my match when it comes to weird foodie concoctions! I swear when I sent her a jar of locally made FROG preserves, our minds were suddenly and mysteriously linked…I guess you could call us blood jam sisters! ūüėČ

Ok, where was I? Oh, yeah…throwdown…blogger recipe style!

You ready?

So you guys know how I made Christin’s Chocolate Chip Cookie Dough Bean Balls not too long ago, right? Well, seems like I haven’t been able to get those things out of my head lately! I seriously polished a full batch of those off in less than a weekend…by myself!

And, from the looks of this bottle, I also can’t seem to get enough of Jess’s PB&J BBQ Tofu Sandwich!

And then the dreams began…

Suddenly I was transplanted into a huge factory with these ginormous food processors churning away at some dessert hummus (where IS my spatula??). Then, I look down and suddenly see my new bottle of crack bbq spice.

Hmm…coincidence? I think not!

PB&J (BBQ) Hummus Balls: ¬†(yields: ??) <-I may or may not have used the “one for ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬† ¬†the pan, one for my belly” method! ūüėČ

  • 1 can garbanzo beans, rinsed and drained
  • 1/4 cup smooth peanut butter
  • 1/8 teaspoon salt (omit if using salted peanut butter)
  • 3 tablespoons of your favorite jam (I used FROG preserves)
  • 10 drops vanilla stevia
  • 2 tablespoons brown rice flour
  • 2 teaspoons BBQ seasoning (optional, unless you’re weird like me!)
  • 1/3 cup chopped dried fruit (something that pairs nicely with your jam. I used apricots)

1. Preheat oven to 400¬įF.
2. Combine all ingredients except for the dried fruit in a food processor and process until     smooth (you may need a small drizzle of water to help it come together).
3. Transfer mixture to a small bowl and stir in the dried fruit.
4. Using a cookie scoop or tablespoon, scoop out “dough” and place on a cookie sheet ¬† ¬† ¬† ¬† ¬† ¬† ¬†lined with aluminum foil.
5. Roll dough between hands to get more of a “ball” shape.
6. Cook for 12-15 minutes or until golden brown on the bottom.

My favorite sandwich now in a portable, bite-sized ball!

And of course, if the thought of BBQ seasoning dancing around your palate with PB&J freaks you out a bit, you can always leave it out and just have PB&J Hummus Balls!

The addition of the dried fruit adds the PERFECT amount of texture to these! I’m thinking my next batch is going to make use of the dried bloobs I still have stashed in the pantry from a run to Trader Joe’s…mmm!

Or maybe you’re feeling a bit lazy?

Then don’t bake them at all!

Just spoon you up a bowl of some PB&J Hummus!

I have a bit of an obsession with dried fruit…as in if I see something I haven’t tried before, I HAVE to buy it! I think I’d have to say my favorite is Calimyrna figs!

WIAW: Weekend Edition

Hey peeps! I’m posting early for another¬†What I Ate Wednesday! I want to thank you guys so much for making Kiss My Broccoli the most clicked link from the last WIAW Party!


So I’m doing things a little different this week! I’ve been trying to eat more intuitively over the past few weeks and I thought I’d give you guys a true look at a schedule-free day of eats from last Saturday where I ate WHAT I wanted WHEN I wanted it!

When I woke up, I wasn’t really feeling breakfast, but I knew I was heading to the farmer’s market so I had something light on the way out the door:

Breakfast (8:15am)
Banana and ¬†1/2 caf coffee (because I can’t live without my man Joe!)

With a side of “candy” as per usual

Brunch (11:15am)
Oats cooked in half water/half almond milk topped with fresh strawberries,
homemade coconut butter, and flax sprinkles

Post bike ride recovery (2:00pm)
Diluted chocolate milk

Lunch (3:15pm)
PB&J Hummus sandwich with a side of fruit

Dinner (6:00pm)
A little bit of this…a little bit of that:
Cottage cheese sprinkled with pepper & smoked paprika
steamed edamame

Enjoyed outside on the patio while soaking up some sun!

Bedtime Snack (10:15pm)
Marbled rye, creamed corn mixed with nooch
tomato slices
bread ‘n butter pickles
fresh basil

I SWEAR I’m not pregnant!

Here’s the twisted train of thought that led to this strange combo:

“Hmm, I really want a piece of that rye bread I bought from the market today….and a tomato. Ohh, a cheese and tomato sandwich sounds really good right about now! Wait, I’m out of cheese!”

And then when I went to the pantry for the nutritional yeast, I spied the cream-style corn I bought the other day (another nostalgic food item)…

The pickles and basil however cannot be explained! ūüėČ

So there you have it, a complete day of listening to my body and eating what I want. I’ve learned over the past few weeks that when I listen to my body, I actually prefer to eat something light for breakfast and then have second breakfast and lunch a little later in the day. I only wish everyday’s meals could be without schedules and time restrictions!

C is for Copy-Cat!

Hello my little tofu junkies! It seems more of you than I thought have an appreciation for the ‘fu! And for all you timid souls out there, bite the bullet and try a wheat grass shot. I promise it won’t kill you…and well, if it does, according to Lindsay, you’ll have super fresh breath! ūüėČ

So I saw this fun little survey on Janetha’s blog while getting caught up on my reader over the weekend annnnnnnnnd since I have such an odd fascination with question and answer type things, I figured I’d play copy-cat!


A is for Apple, what’s your favorite variety?

Honeycrisp all the way…so sad that they’re only in season for a short time in the fall! I swear they are the perfect balance of sweet and tart with an amazing CRUNCH!

B: is for Bread, regardless of nutrition, calories, or whole grains what is your favorite type to have a nice big piece of?

To be honest, I don’t think I’ve ever met a carb bread I didn’t like, but my current fave is this marbled rye I bought at the farmer’s market last weekend!

C: is for Cereal what is your favorite kind currently (just one!)?

I have SO many favorites, but lately I’ve been kickin’ it old school with some good old-fashioned Cheerios!

D: is for Doughnuts, you might not currently be eating them but what kind do you fancy?

Unglazed blueberry cake doughnuts have always been my favorite!

E: is for Eggs, how would you like yours prepared?

Oh my gosh, how DON’T I like them? If you’ve been reading my blog for any length of time, you know by now that I could never live without eggs…or nut butter…and sometimes together!

F: is for Fat Free, what is your favorite fat-free product?

F is for FRUIT!

G: is for Groceries, where do you purchase yours?

Mostly from Kroger, Walmart, and Sam’s Club but when you know I live for the Whole Food’s/Trader Joe’s runs!

H: is for Hot Beverages, what is your favorite hot drink?

Do you really need to ask?

I: is for Ice Cream, pick a favorite flavor and add a fun topping.

I’m much more of a fro-yo girl these days with taro being my new all time favorite and toppings?…well, just about anything as long as it includes sprinkles!

J: is for Jams or Jellies, do you eat them, and if so what kind and flavor?

Yeah, I guess I like jams…

Please don’t make me choose!

K: is for Kashi, name your favorite Kashi product?

Who could hate on a cereal that is packed with protein and fiber with only 6 grams of sugar?

L: is for Lunch, what was yours today?

Today was our monthly potluck at work…no pic but it was quite the smorgasbord including: a small deli sandwich, potato salad, broccoli slaw, shrimp pasta salad, and peanut butter cup cheesecake! Mmm!

M: is for microwave, what is your favorite microwave meal/snack?

I recently tried Carrie’s method for SUPER fluffy oat bran…and now I’m addicted!

N: is for nutrients, do you likes carbs, fats, or proteins best?

Um, refer to the letter “B”! ūüėČ

O: is for oil, what kind do you like to use?

Olive oil for cooking, coconut oil for baking!

P: is for protein, how do you get yours?

I don’t eat a lot of meat, I prefer to get my protein from:

  • eggs, eggs, EGGS!
  • beans
  • cottage cheese
  • protein powders
  • tempeh/tofu

Q: is for Quaker, how do you like your oats?


R: is for roasting, what is your favorite thing to roast?


S: is for sandwich, what’s your favorite kind?

It’s really hard to choose a favorite. I’d have to say either a PB&J tofu or a hummus & pickle…mmm!

T: is for travel, how do you handle eating while traveling?

What’s there to handle? You only live once, right?

U: is for unique, what is one of your weirdest food combos?

Hmm, just one? Since I started this blog, I keep getting weirder and weirder…

Here’s the latest:

Marbled rye with creamed corn mixed with nooch, topped with sliced tomato, bread ‘n butter pickles, and fresh basil! You know what I always say…don’t knock it!

V: is for vitamins, what kind do you take?

Shhh! They’re not vitamins…they’re “candy” ūüėČ

W: is for wasabi, yay or nay?

I’m a complete and total wimp…nay ūüė¶

X: is for X-RAY. if we x-rayed your belly right now, what food would we see?

Well, since I ate so much for lunch (they really should start having siestas in America), dinner was a random trips to the kitchen for snackage: a handful of bloobs, one slice of rye with pb and carob chips, and some bread ‘n buttah pickles straight from the jar because I’m classy like that!

Y: is for youth, what food reminds you of your childhood?

  • School cafeteria chocolate milk in the baggie that you had to poke with a straw (anyone know what I’m talking about?)
  • Lucky charms that I would always save the marshmallows for last
  • Squeeze Its and Mondos
  • Toast with butter and sugar
  • Mom’s homemade chicken pot pie and pot roast with veggies
Ohhh, I could go on and on!

Z: is for zucchini, how do you prepare it?

Cut that sucker up and eat it raw baby!

Drunk on Wheat Grass

Hello my little cheese heads! Sounds like a lot of you want in on the strawberry and goat cheese action from yesterday’s post! I assure you they WERE as good as they looked…only next time, I may try doubling the recipe as I had to pair my little cakes with some Greek yogurt to satisfy the beast in da bellay! ūüėČ

So as I alluded to in yesterday’s post, I enjoyed the last part of my weekend in my favorite place within four walls…Trader Joe’s! Well, ok, I may have stopped at Whole Foods first annnnnnnd after spending TWO HOURS in there (and practically carving out my right kidney to pay the cashier), the Trader Joe’s stop was more of an “in-and-out with a purpose”!

While at Whole Foods, I decided to get a little brave…anyone ever tried a wheat grass shot straight up?

Smoothie Man approves!

From the looks of my receipt, I’m thinking Smoothie Man must’ve slipped a little sumthin’ sumthin’ into my magical green nectar…you THINK I’m lying about the kidney??

Organic granny smith apples, coffee (totally lured in by a sample), coconut flour, puffed kamut, and the only Luna bar flavor I’ve not been able to find in Clarksvegas…

Siggi’s (best yogurt on the face of the planet!), Truwhip, and the most amazing cheese dip ever!

Again, I succumbed to the sampling sorcery!

Finally…some quality seafood!

Seriously Clarksville! Can we get a fish market?!

Next up, Trader Joe’s…

I kept it pretty simple…the bare necessities if you will

Garlic aioli mustard, Valencia PB, mango butter, cashews (for more pancake “icing”), tortillas, and pre-cooked tofu

After I got home and had come down off my “wheat grass high,” I pulled out the tofu for a quick mindless meal…

And it was delicious!

The rest of my turnip greens saut√©ed in olive oil with LOTS of onion, garlic, and the ‘fu
with a side of homemade spi-say potato chips!

And of course…it’s a crime against humanity to eat potatoes without ketchup!

Strawberry & Goat Cheese Pancakes

Good morning everybody! I hope you are all enjoying the middle of your long weekend! Sadly, I have to work tomorrow…so think of me while you’re out barbecuing it up with the fam, mmmkay?

It didn’t take me long to come up with a recipe for this Pancake Sunday after admiring those plump juicy strawberries I came home yesterday from the farmer’s market. Who could turn down a warm and tender pancake stuffed with fresh sweet-tart strawberries and creamy bits of goat cheese?

Not this girl!

Strawberry & Goat Cheese Pancakes: (serves 1)

  • 1/4 cup spelt flour (any flour would do, this was just the one I grabbed)
  • 2 tablespoons toasted wheat germ
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/4 cup unsweetened almond milk
  • 1 teaspoon vanilla
  • 1 medium egg
  • 1/8 cup diced strawberries
  • ~1 ounce of crumbled goat cheese
1. Pre-heat non-stick skillet to medium heat and coat with cooking spray.
2. Combine dry ingredients in a small bowl and stir together to break up any clumps.
3. In a separate bowl, whisk together the milk, vanilla, and egg.
4. Add the dry ingredients to the wet and stir until just combined.
5. Stir in strawberries.
6. Pour batter in pre-heated skillet (I made 4 “mini” cakes) and allow to cook for 3-4 ¬† ¬† ¬† ¬† ¬† ¬† minutes (shorter time for smaller cakes)
7. Just before flipping, top cakes with crumbled goat cheese 8. Cook for 2-3 minutes on         other side before serving with more strawberries and goat cheese.

These cakes are only sweetened with the natural sweetness of the strawberries. For normal taste buds, you might want to add 1/2-1 teaspoon of sugar or some stevia to the batter. I thought they were fine as is, but I’m not exactly what you call “normal” now am I?

The best part about these, other than that occasional “surprise” of goat cheese, is that they have a crisp exterior while staying nice and…er, dewy inside! Yes, dewy…I like that!

And they’re pink! What’s not to love about that?

After jamming it up at the market, I wanted to get a workout in, but it was too pretty of a day to stay indoors. Although I had a fantastic run on Tuesday, I just wasn’t feeling it today so I decided to knock the dust off the ol’ bicycle and take it for a spin!

After a good 9 1/2 miles (I know, I’m sure my butt will be thanking me in the morning!),

Hmm, did you know that S.bux DUMPS sugar in their choco milk?? Unfortunately, my much-needed refreshment had to wait until I got home to water milk down my beverage to suit my palate. Good news is instead of $3 for one chocolate milk (highway robbery), I ended up with two (small victory)!

I think I’ve done a fine job of perfecting balance in my life today because since I got home from my ride I have done…absolutely nothing! Haha! Feels great to be lazy, ESPECIALLY when you’ve already busted out an early workout!

Now, I’m going to finish the evening catching up with my favorite cereal serial killer…
