I Like My WIAW Quick & Easy

Hello beautiful ladies and handsome gentlem-…Matt! You guys sure know how to boost a girl’s ego! I just finished reading all the comments from yesterday and although the idea for PB&J Hummus came from just a simple craving, I AM feeling a bit GENIUS right now! Haha! Let me know what you think if you’re daring enough to try it!

So yeah, its Wednesday! And you know the only thing to look forward to on Wednesday, right?

I have to say that through the WIAW link ups, I have found a lot of really amazing blogs! I suggest you head on over to Peas & Crayons (ahem, AFTER reading my post of course) and drool over the links, um…I mean, check out the party!

Breakfast (7:00am)
Quick & Easy Chocolate Protein Pancakes
topped with peanut flour sauce
and 1/2 banana

(Un-pictured cup of 1/2 caf Joe)

Wanna know the secret to quick and easy weekday morning pancakes?

Only 3 ingredients: pancake mix, protein powder, water

BAM!

Instant gratification breakfast!

Snack (11:00am)
Kashi Bar

Still kinda on the fence about this flavor. It’s definitely NOT “chewy”
Well, unless you have the jaw strength of a T-Rex!

Lunch (12:30pm)
Salad: Spinach, tomatoes, portobello mushrooms, carrots, celery, and zucchini
sprinkled with Garlic Gold Nuggets
&
Cottage cheese and nutritional yeast for a quick & easy “salad dressing”

Snack (3:00pm)
Voskos Greek yogurt with granola

What’s better than quick & easy?

Quick, easy, AND cheap!

Pre-workout Snack (5:00pm)

On my way to the gym, I had a date…he was so easy! ๐Ÿ˜‰

Dinner (7:30pm)
Steamed squash and asparagus (I swear it’s under there)
topped with salsa & three pepper hummus
and a perfectly fried egg

And thenย thoroughly covered sprinkled with Mrs. Dash Crack!

The only down side to working out in the evening…I’m STARVING by the time I get out of the shower! Luckily this dinner was put together in less than 10 minutes!

Now that’s what I call quick & easy!

And of course my day involved lots of loving on this guy!

  4. workouts leave me super ravenous too! I always have to have my meal planned! =) as always – everything looks beyond delish! The fried egg on top looks straight out of a cookbook =) looove it! You totally make me want to be more creative with my food presentation! mwah!

    …even if my initial thought was “why is she doing WIAW on Thursday? eh well, I guess it’s what she’s feelin’!” haha
    those pancakes look awesome. tera’s whey is probably the best protein powder i’ve had yet. i loved the bourbon vanilla.
    ugh, all of my dinners have been quick and easy lately! part of me’s been enjoying it, and part of me can’t wait until i have time to make some sort of elaborate dinner, haha.

  6. I had over easy eggs on roasted veggies today! All the cook kids are doin’ it! Oh and I so love the manager special there! I swear I go through Kroger searching for that sticker! The best thing I had today though was an apple danish…it so made my day! Have a great night Heather.

    Best thing I ate today…Tempt Non-Dairy Frozen Dessert in Chocolate Fudge. YUM! Your meals look delicious! Love how creative you always are with your breakfasts. I’m lucky to get a cup of coffee in my system before rushing the kids out the door to start our day. And then my breakfast, while out and about, is most likely a Clif Crunchy Granola Bar. BTW…you motivated me to start drinking my coffee black…with cinnamon. Thank you ๐Ÿ™‚

    • Hmm, maybe you could give overnight oats a try? The only thing you’d have to do in the morning is add in whatever toppings you’d like! I love cold oats with a nice big cup of hot coffee! Or if you need something more portable, the Fitnessista’s breakfast cookies are great! They’re more forkable (yes, I am making that a word), but if you pop it in the freezer for few minutes before you head out the door, you could easily wrap it up in a napkin and carry it with you!

      Yay! So glad to hear that you like the black coffee/cinnamon combo too! I can’t believe it took me so long to come around to the idea!

        Thanks for the breakfast suggestions! I love overnight oats! I actually used to make them years ago when I taught. They remind me of summertime. School is almost out for summer…so I will be in a much more relaxed state of mind to enjoy breakfast again ๐Ÿ™‚
        Yay, black hot coffee! Now I’m into iced coffee…mixed with hazelnut milk – YUM!!!

        • I have yet to try hazelnut milk, but I hear it’s really good! I can only find one brand at the store and it runs a little high, so I’m holding out for a sale! I can be so cheap sometimes, yet I won’t bat an eye paying $10 for a thing of nut butter! Lol

  8. I use the microwave in a pinch when I’m making squash. I prefer it roasted, but when I’m starving, the microwave does the trick! Your meals look amazing as usual. I always get hungry reading your posts, especially right now- I am still at work and starving!

    Best thing I’m eating? Right now it’s coconut buttered oats with raspberry jam!

    Workouts always leave me hungry too, when it’s before dinner. I aways snack on carrots while I’m cooking ๐Ÿ™‚

    How do you cook such perfect over easy eggs!? Mine are always a disaster.

    • I heat my skillet to medium heat and make sure it is hot before adding the egg. Then I crack the egg in and after it begins to set, I cover the skillet with a lid (or foil works too) until it’s done (maybe about 3 minutes?)! Voila…a perfect sunny egg!

    I’dknow what you mean! After i work out in the evening i want to grab everything in sight! That happened last night and i threw together a simple salad, beans and cottage cheese mix and then a sweet potato cut into rounds, put in the microwave while i showered and then when I got out i quickly roasted it in a pan! PERFECTO! ๐Ÿ™‚

  26. I make an easy ‘Oven’ or ‘grill’ dinner when I don’t have the time for anything else. But one of my favorite 5 minute dishes is a microwaved baked potato topped with microwaved broc, cheese, and greek yogurt!
