Mint Chocolate Chip Dessert Hummus

Wooo! How bout that for some title bait?

Yes, I did in fact make a recipe JUST to have something green to post about for St. Paddy’s Day.

Yes, it is simple…delicious…and can be made in a blender, food processor, magic bullet, or if you don’t mind it being a little chunky…fork it up!

No, it does NOT taste like beans.

Yes, it makes a perfectly acceptable dinner…hey, I’m part Irish AND it’s St. Paddy’s Day!

Mint Chocolate Chip Dessert Hummus:
Inspired by the Wannabe Chef’s Peanut Butter Dessert Hummus

  • 1 cup white kidney beans
  • 1/4 cup almond butter
  • 1/4 cup maple syrup
  • 3/4 teaspoon mint extract
  • 6-8 drops green food coloring
  • 1/4 cup semi-sweet chocolate pieces (or chips)

1. Combine beans, almond butter, and maple syrup in food processor and blend until smooth and creamy.
2. Add in the mint extract and food coloring and process.
3. Stir in chocolate pieces.
4. Lick the food processor clean with a rubber spatula…yes, that is the MOST important       step in this process!

I made this recipe small since it was a first time experiment, but feel free to double…or even triple it…you WILL want more once this is gone!

Note: Mint Chocolate Chip Hummus sandwiched between two graham crackers tastes JUST like a Thin Mint without all the saturated fat or the pain in your wallet!

    I don’t think I’ve ever used a spatula to scrape food off the side of the food processor- I just use my finger / tongue 🙂

  9. I made matcha cookies! We also made fish and chips for the boys. I never really do festive things for holidays like this, but it was actually kind of fun. Besides, any time I can cook with my husband makes for a great night. Your festive treat looks delicious!

    Between two graham crackers sounds wonderful! I had a bit of a tummy ache yesterday so I stuck to vegetable soup, I would have normally made something green though. I love cooking special things for the holidays.

  11. You’re going to think I’m SUPER weird, but I can’t stand chocolate and mint together. People go crazy when they hear this! I never have liked that combination. BUT if I did, I would make this hummus right away! Have a great day!

    • Actually, to tell you the truth, I used to hate mint flavoring in general until I made some almond shortbread cookies one year for Christmas that had crushed candy canes on top! Oh, I die!

      And I totally “tested for poison” before adding the mint and it’s superb without…just so you know! 😉

    Wow, this looks fantastic. I love the green color! I’ve been meaning to make dessert hummus for a while now so this recipe might be just the thing to finally get me to do it. I made mint chocolate chip cookies to celebrate St. Patty’s day. And dyed them green too. The dough looked a lot like your dessert hummus!

    My goodness, I loved HEAB’s version, so I’m sure I’ll LOVE this one, too! Protein, chocolate, and almond butter all in the same creamy goodness? Yes, please! I could seriously eat that whole batch in one sitting! 🙂

    • Thanks Lisa! Honestly, I think this is the first time I’ve ever green-fied my eats for the holiday…I already eat a lot of green stuff anyway, but I thought it was fun!
