What I Ate Wednesday: Raw Oat Groats & Tricky Tempeh

Hey hey hey and Happy Hump Day! Today was another B-E-A-Utiful day outside which was of course another day spent trapped inside four walls! I’m so hoping this weather continues over the weekend so I can actually enjoy it!

It’s Wednesday folks…you know what that means! It’s time for another What I Ate Wednesday!

I’m so excited to share my breakfast with you guys! In the spirit of all things quick, easy, and of the overnight variety, I tried something a little different for my morning bowl!

Breakfast (8:00am)
“Wonderbowl” Groats and a cup of Joe (unpictured)

All I did was soak 1/2 cup of oat groats in 1/2 cup of unsweetened vanilla almond milk and 1/2 cup water overnight. This morning I poured the groats and soaking liquid into my Magic Bullet and blended away! Once the groats were good and processed, I added a tablespoon of chia seeds and let it set for about 15 minutes to absorb the liquid. What I ended up with was a bowl of raw oats with the perfect consistency and chew factor topped with bloobs and steebies and a good ol’ spoonful of PB&Co. White Chocolate Wonderful!

Lunch was tasty I’m sure…what little bit I actually tasted! We were crazy busy at work today so this was thrown down in approximately 12 minutes!

Lunch (1:00pm)

Salad: Spinach, mini peps, carrots, portobellas, and corn topped with 2% cottage cheese + pepper and a Trader Joe’s Veggie Masala Burger on a whole wheat English Muffin.

Post Workout Snack: (5:00pm)
Lundberg Rice Cake topped with dark chocolate almond butter,
1/2 a banana and cinnamon

Well, I think she forgot about this little remark until I said something after dinner! Muhahahaha!

Dinner: (7:00pm)
Tricky Tempeh Taco Salad

Tricky Tempeh Taco Salad: (serves 4)

  • 1/2 tablespoon olive oil
  • 1/2 large onion, chopped
  • 15 oz can diced tomatoes, no salt added
  • 1 package Trader Joe’s tempeh, crumbled
  • 2/3 cup frozen corn, thawed
  • 1 tablespoon taco seasoning
  • pepper to taste

1. Saute onion in oil over medium-high heat until translucent.
2. Add all other ingredients, turn heat down to low and simmer for 10-15 minutes to               allow flavors to combine.

Taco Salad Layers: Crumbled Baked Tostitos Chips, spinach, taco “meat”, Daiya cheese, guacamole (just a simple mix of avocado, garlic powder, lime juice, and Mrs. Dash Chipotle), salsa, and cilantro.

I sat at the table and listened to my sister mmm’ing and ahh’ing. I waited until she had cleaned her plate, then asked what she thought of dinner.

“It was soooo good!” she answered.

I said, “Oh, so you couldn’t taste the tofu?” *insert evil grin*

“Really?!”

She couldn’t believe it, nor could she believe she had just had soy cheese! Hahahahaha! Another convert in the making! 😉

Well, I’m off to finish up Whip It and munch on some juicy green grapes with the sis!

    • I used to hate cottage cheese, but now I almost always top my salads with it (or hummus). I love the extra protein it gives and you don’t need any dressing!

      Always a pleasure my dear! Looks like WIAW is growing a bit too! Yay!

    I’ve been really tempted to trick my husband into eating tofu. He declares tofu something he won’t eat because it’s “geometric.” My mother, I learned recently, used to put tofu in her lasagna every time she made it when we were kids, instead of ricotta. I’ll definitely try that! Got to tell you that breakfast looks tasty, I may need to give this method of oat-making a try.

  4. I tricked my mom into trying a bite of tofu pudding once and she liked it! People are always hesitate to try my food because they know I eat ‘weird’ things- but once they do, they usually can’t taste the fact that it has vegetables / tofu / healthy stuff in it 🙂

    • I know what you mean! People look at me like I’m crazy when I tell them I made muffins with avocados or spinach pancakes! When I offered to host Thanksgiving dinner last year, the first thing my dad said was, “Nothing too weird, ok?” Ugh! He takes the fun out of everything! 😉

    Siblings can be so easy to fool sometimes. I have done the exact same thing with my brother and he could not believe it either and he will not touch tofu with a pole.

    My ultimate goal is to trick my dad into eating tofu since he is a incurable meat-eater. That would be a glorious day!

  10. i love groats! i tried to make overnight oats once before with regular oats but it didn’t turn out good. maybe the groats would be better since their a bit denser. love your glass bowls, beats plastic. thanks for the tempeh taco idea! genius.

    • What about your overnight oats seemed to go wrong? A lot of times you can thicken up the mix by adding yogurt and/or a tablespoon of chia seeds if you think it’s too soupy. I love overnight oats in just about any variety, especially these with the chewy texture!

      I just recently made the switch from glass to plastic. Since I take my lunch to work everyday and occasionally use the microwave, it makes me feel better to use glass. You never know how many plastic chemicals are soaked up during the heating process! Eww!

  14. Love the sister trickery! I don’t eat much tofu, so I haven’t had a chance to sneak it into any meals yet. I do ‘fortify’ most of my dishes with something random, like oat bran in banana bread or shredded carrots in tomato sauce, so my family is never 100% sure of what they are eating.

  18. I don’t think you can get groats in my part of the world… but if they give porridge the chew factor, I want them!
    I made chocolate avocado cupcakes with chocolate tofu buttercream last week because I’d done a vegan challenge week for work and didn’t tell my most doubtful colleague what was in them till she’d eaten one – and said she eally liked it.
    She pulled a face and said “I can’t believe I’ve just eaten tofu!” Brilliant 🙂

    and the taco salad looks PERFECT! easy, fast, delish!

    and i used to trick the hubs into tofu, but now, it’s just…tofu 🙂 12 yrs and lots of plants later, he’s finally on board. 🙂

    • Haha! Yeah, I’ve lurked around your blog off and on for a while now! 😉 I love your new layout…it looks great! The main reason I got the Masala burgs was b/c I saw you post about how amazing they were on Allie’s blog! Lol

    I see this post is 10+ years old, so you may already know about anti-nutrients, saponins, phytic acid & phytates by now.

    Basically, most whole grains & pulses have built in ‘protection’ to defend against predators (usually insects). These can range from a soapy taste to blocked nutrient absorption due to complex molecular structures.

    Happily most of these issues can be remedied by pre-soaking, then draining & rinsing your raw material to eliminate most of the phytic compounds. That liquid is unhealthy & shouldn’t be consumed, but it’s fine to water your houseplants with.

    To make these even more healthy, sprouting grains and pulses is the best practice. Once sprouted, complex proteins have broken down into much simpler molecules that are much more easily absorbed into you nutrition system.

    So at least soak for 30-60 minutes or, better yet sprout for a day or two before consuming for much more nutrition than consuming raw.
