HAPPY FRIDAY EVERYBODY!!

Well, at least it is for me anyway! Hopefully there are a few of you out there that get tomorrow off too! Any snow bunnies out there? It seems like the winter blizzards are in full force this week! I’m just glad we didn’t see any of it here. Snow is SOOOO last year ya know! πŸ˜‰

Before I get into the day’s eats, let tell you that I have been trying to clean out my fridge all week. No, I’m not going on a trip (I wish), more like just trying to make itΒ the whole week without having to run to the store! Plus, I finally admitted to myself that there are some problems in my relationship…with my fridge that is…

1. I open like a bajillion containers of stuff at one time and am always having to reorganize the shelves so that everything fits! I currently have 5 different jars of jam open. None of which I can even eat now due to Sugar-Free Week!

2. I often forget about how much I have at home and buy “just one more thing.”

3. And lastly, I am a produce fiend! I like a lot of variety, but I buy more than enough fruits and veggies for one person to eat in a month and then when I get home from the store…well, refer to problem #1!

Ok, now on to the food!

For breakfast this morning, I decided to whip up a half batch of some of Alex’s One Size Fits All Pancakes after seeing HEAB’s extra fluffy/drool-worthy batch the other day.

I thought they turned out really well, especially since I ran out of almond milk halfway through the recipe and had to improvise with some watered down kefir! I also threw in a sad little banana that was on death’s doorstep!

You would never guess these fluffy little babies are gluten-free, sugar-free AND vegan! To make them even better, I topped my little banana cakes with something else a little fluffy!

Sugar-Free Apple Walnut Butter:

  • 1/4 cup walnuts
  • 1/4 cup natural applesauce
  • cinnamon
  • water to thin

Combine all ingredients into a food processor (or Magic Bullet) and process until smooth and creamy! Mmmm!

After breakfast, I threw a lunch together to take with me to work. Since I’m all out of my regular dinner leftovers, I decided to make myself a wrap. I don’t know why, but I always forget how much I love wraps!

Last time I went to SAMs, I bought a ginormous container of Sabra’s Spinach & Artichoke Hummus so I decided that since I’d been a good little girl this week and polished off both Mama Pea’s Zucchini AND TJ’s Tomato & Basil Hummuses (hummi?) that I would finally crack into the big mamba jamba!

TJ’s whole wheat tortilla (the ONLY bread substance I have in my house with no added sugar!), spinach and artichoke hummus, roasted red peppers, pea sprouts, and sliced cucumber (hiding under the sprouts).

I had this with some plantain chips and raw snap peas and it was
Abso-freakin-lutely delicious!

For dinner, the hummus made another appearance! Can you guess where it is?

This dinner was so not a recipe dinner. I just threw a whole bunch of stuff together and in 30 minutes called it a meal! Quick.Easy.Delicious!

Crunchy Chicken Strips: Chicken breast cut into strips coated in spinach and artichoke hummus and dipped in a mix of whole wheat bread crumbs and Italian seasoning. I dipped my strips in some warm sunflower butter…YUM!

Baked Smoked Paprika Potato Chips: 1 medium potato sliced into rounds, drizzle of olive oil and a sprinkling of garlic powder, black pepper, and smoked paprika

Roasted Beet, Cucumber, & Feta Salad: 1 large roasted beet (left-over from my beet experiment) and 1/2 large cucumber mixed in a little olive oil and balsamic vinegar, topped with crumbled feta cheese.

And with that meal, I am now officially out of everything!! Not really, I still have my jars of jam, but I seriously cannot be expected to live in a house without my necessities:

  • almond milk
  • Greek yogurt
  • eggs
  • spinach
  • portobellas
  • bananas

The ONLY thing that is keeping me from going completely over the edge of insanity is the fact that I do have a good amount of nut butter on hand…um, 5 to be exact! What? Only FOUR of them are open! Haha!

What foodie items can you not live without?
It’s only been 2 days since I finished up the spinach and I think I’m already starting to develop and eye twitch! πŸ˜‰ <- See?

One food I probably couldn’t live with would be fruits. or chocolate. πŸ™‚

  2. Girl, I have a rotation of about 12-14 nut butters at all times… you can feel better now. πŸ˜‰

That wrap looks badass, as does your walnut butter!! Lurve!

  3. applesauce walnut butter? ohmygawwwwwwwwwd yes! fantastic! Sign me up!

  4. haha I need my spinach every day too girl! and apples! I go crazy with out my apples! Everything looks absoltuly drool worthy. gah! INVITE ME TO LIVE WITH YOU! Pleaseee!

I am sooo trying those potato chips.

    • Miss Carlee, would you please come live with me and make me some of your Cacciatore- Style Chicken with Vegetables??

I thought the chips came out perfect. I make them all the time, but this time I let them bake at 425 for about 10 minutes, flipped them, waited 10 more minutes and then turned the broiler on low for about 3-5 minutes until they got nice and brown! You can also sprinkle them with grated parmesan cheese! It takes them over the top!

  5. I love those crispy chickens!! I need to recreate those!! I can’t live without greek yogurt!! I am also short on spinach and cringing!!

  6. lindsay says:

Those pancakes look amazing!!! I love the nutbutter on top! So glad you liked my recipe πŸ™‚

How is your sugar-free week going so far? If you have any questions, feel free to send me an email!

I cannot live without peanut butter….I have tried and failed so many times…..I’m addicted πŸ˜‰

    • Oh, I KNOW I couldn’t live without peanut butter! Actually, if I was completely out in my house, I’m pretty sure a panic attack would be in my near future!

Sugar-free week is going pretty good so far! I’m really learning a lot and paying even more attention to ingredient labels. I had no idea until the other day that Worcestershire sauce had sugar in it! The main thing is the mental part of it…you always want what you can’t have, right?

  9. JoAnn says:

    Your entire day looks delicious!!!!!!
My necessary foodie items are definitely almond butter, coconut milk, red peppers (use them in everything) and bok choy (I’m a great stir fry person) and hormone free, organic chicken.
I am new to your site and very much enjoying it. Making cheese straws today!

    • Welcome JoAnn! So nice of you to leave a comment! I am definitely a stir-fry person as well. It’s a great way to pack in the veggies! You know, I’ve never actually had a cheese straw, but they do sound yummy! Happy baking!

  10. Jenny says:

Eek no bananas or greek yogurt?! Oh my O_o If I ran out of cottage cheese, yogurt, or pb I’d have to make an emergency grocery store trip ASAP!

  11. You’re so cute Heather. I for one could not live without oat bran. Must eat it everyday.

Can I come over to your house for dinner…and lunch…OK, breakfast too? I want some of that apple walnut butter and chicken strips in sunbutter? I love it!

Hope you enjoy your day today. I’m so over the snow as well! I need spring in my life sooooon!!!

  12. your pancakes looks so yummy!

  13. I don’t think I can live without yogurt anymore. I’m out right now, and will be going to the store as soon as I can to get some! Also, those potatoes look amazing!!

  14. Jen says:

I think you need to move in and cook for me and my family πŸ™‚

  15. Helen says:

Those pancakes look good. I am toying with the going gluten free idea.

Staples I can’t live without: yogurt, eggs, almond milk, peanut butter, oatmeal, flaxseed, tea, bananas, apples, kiwi, lemons, spinach, tomatoes, oinions, and garlic.

I know – long list right! Believe me if I run out of any of the above items I am at the store immediately to restock..lol!

    • I definitely should have included oatmeal in my list. I’m running really low now and I’m starting to get a little nervous! Last time I ran out I cooked oatbran and steel-cut oats, but it just wasn’t the same! The body wants what the body wants right?

  16. Jen says:

OMG I love the walnut topping for your pancakes. Looks so great! I actually love walnuts. One of my fav.

I would say I can’t live without Greek yogurt, smoked paprika, EVOO, and tomatoes. Just love them in everything.

  17. Mrs. Fish says:

    TJ’s Almond Butter
Bananas- It’s amazing how many things I use bananas in! Snacks, oatmeal, smoothies!
    Happy Friday!

  18. I go through phases but oatmeal has been in my life on a daily basis for years… carrots are a frequent indulgence as well πŸ˜‰

i’m also weirdly obsessed with la tortilla factory’s low carb tortillas. i’m not sure why… ah well!

And lately I’ve been on a yogurt kick but they haven’t restocked fage at my school’s market soooo i’ve been without, and it’s been tragic!

  19. elise says:

eye twitch, hahahhaa. you are hilarious. your clever hypocalcemia joke is too nerdy for words (and PERFECTLY nerdy for me to appreciate). also, im going on day 1.5 without spinach and its not right.
other things i cant live without nut butters, hummus, oats, apples, and (i hate to say it) coffee.

    • Haha! So glad you caught that! I was hoping somebody could appreciate a little nerdy humor! Ugh, I polished off my last apple yesterday and don’t plan on going to the store again till Saturday…I don’t think I’m gonna make it! Eek!
